veggie, vegetable 1 cup thin sliced zucchini
1 cup thin sliced yellow squash
1 cup fresh snap peas
1/2 cup thin sliced green onions
1 cup thin sliced carrots
1/2 cup chopped sweet red pepper
1 cup fresh green beans cut in large pieces
1 small can of sliced olives (drain)
1 small can of corn

Dressing: 8 tablespoons of oil (your choice) olive or veggie, 1 heaping Tsp of minced garlic, 1 Tbsp minced fresh parsley, 2 tsp sugar, 4 tsp lemon juice, 1 Tbs cider vinegar, dash of salt, pepper and dill weed.

In large pan bring 4-5 inches of water to a full boil. Add beans, peas and carrots. cook for 5 minutes, drain then rinse in cool water. Put zucchini, squash, corn, red pepper, onions and olives in a bowl.
In a jar with tight fitting lid add oil, vinegar, sugar, lemon juice, parsley, garlic, salt, pepper and dill weed and shake well! Pour over veggie mixture and toss to coat. Refrigerate about an hour. You can put this into a pretty display dish or casserole dish of some sort for serving at the party!
